"When locals don't know where to take out-of-town guests for hotpot, Peijie is usually the answer. The tallow broth is intensely aromatic with a boldness that feels distinctly Chongqing. Be serious about your spice level — mild or even extra-mild is the right call for most visitors. As a local, I order mild myself; authenticity has nothing to do with how much pain you're in. Duck intestines, tripe, and crispy pork are the must-orders — these three will tell you exactly why Chongqing hotpot is so hard to forget."
