"The grease level of the floor is the absolute standard for quality here. Skip the regular grilled meat and order the heavy wok-fried jianghu dishes — explosive pork intestines or pickled-pepper eel. Watch the cook go savage with a wok over half-meter-high open flames. No English is spoken; point at what looks freshest. This is local food culture at its most uncompromising and alive."
